Grilled Halibut Niçois Salad with Champagne Vinaigrette
Ingredients
SALAD
4 ounce portion halibut, marinated and grilled
1-1/2 cups romaine lettuce, shredded
10 cherry tomatoes, halved
2 tablespoons kalamata olives, sliced
1/4 cup green beans, cut and blanched
1/4 cup egg chiffonade
8 potato gaufrettes
1/4 cup Champagne Vinaigrette (recipe to follow)
Method
Grill marinated halibut and keep warm in oven. In a mixing bowl, toss the lettuce, tomatoes, green beans, olives, egg and dressing. Place gaufrette potatoes on plate, top half of the salad in center, then place the fish, then the rest of the salad on top and then some more potatoes.
Champagne Vinaigrette
Ingredients
1 shallot, minced
1 tablespoon lemon thyme, chopped
2 tablespoons roasted garlic, mashed
1/3 cup champagne vinegar
Pinch of sugar
1 teaspoon salt
1/2 teaspoon black pepper
1 cup olive oil
Method
Mix all ingredients together well.
